Eastern North Carolina Vinegar Sauce
It’s a true sweet and sour taste sensation, straight from the South. And for bona fide Tar Heels, this might as well be holy water. Our
eastern North Carolina sauce is a mixture of cider vinegar (naturally), black pepper, crushed red peppers and other seasonings -- just like folks make it Down East. It’s a heckuva
concoction. Use liberally.
Kansas City Special
Our KC Special sauce pours rich and red,
befitting the strong barbecue traditions of the Midwest. Fast fact: Just in the Kansas City metro area, there are more than 100 barbecue
restaurants. And about all of ‘em share a similar sauce. It’s thick, spicy and flavorful, beginning with a tomato base and infused with seasonings and a touch of molasses. Pour you some.
Memphis Sweet
In Memphis -- stomping grounds for the World Championship BBQ Cooking Contest -- they assemble a sauce made from ketchup, white vinegar, sugar and spice. Typically thinner than Kansas City-style sauce, our Memphis Sweet still stands up tangy and some kinda sweet. It’s the perfect middle ground. Go ahead, spill it over chicken, brisket or barbecue.
Orangeburg Mustard
Ehrfürchtig! What’s that mean? Easy, it’s German for “awesome.” And when our forbearers arrived from Germany in the 1700s, they brought South Carolina a golden sauce, dipped in mustard, brown sugar and molasses. It’s deliciously divine -- a lil’ history lesson in a bottle. And truly, it’s that sauce that colors the ‘cue of the Palmetto State.
